Mikkel Bjergsø, CEO and founder of Mikkeller, has always had a profound love for and fascination with Japan. This might be why it seemed like fate when he teamed up with Bento Copenhagen to open a traditional Japanese ramen joint in Copenhagen back in 2015. Now, 6 years after we opened the first ramen joint in Nørrebro, we are finally ready to present the next chapter in the Ramen to Bíiru.

Food-wise, Ramen to Biiru is a unique experiment. I have to say, I've never had Ramen like this before in my life. They stretched the boundary of what ramen broth can be like with their Yuzu ramen. The first sip of the broth was just electric - the sourness and acidity, I just did not expect that. Usually, this does not work with Ramen at all.
